Healthy Smoked Turkey Salad

Turkey doesn’t only have to be served one time a year!
It's a great source of low-fat protein and rich in Vitamin B.
When Turkey went on sale after Thanksgiving, we grabbed another for the freezer. I love the flavor of Smoked Turkey, so we took the grill and sunshine to our advantage this weekend.

Ingredients:
1.5lbs of Turkey meat, shredded
10-15 purple grapes, quartered
¼ cup of celery
½ cup of red onion
¼ cup of sliced almonds
½ cup Light Mayo (Duke’s with Olive Oil is what I used)
¼ cup of Non-Fat Greek Yogurt
1 tsp of Stevia drops (Truvia is what I use)
1 tbsp of Dijon Mustard
Salt and Pepper to taste
Instructions:
1. Prepare Turkey. We grilled a whole turkey for the smokey flavor; however, you can buy a Turkey Breast at your local grocery store and roast it in your oven before shredding it for this recipe. You just want to make sure you have enough meat for the sauce recipe above. If you have under 1.5lbs you may want to adjust the amount of mayo, Greek yogurt, and Dijon mustard you use.
2. Dice vegetables/fruit above
3. Combine Mayo, Yogurt, Mustard, Stevia, and Salt and Pepper
4. Combine and serve over a bed of lettuce, or your favorite sandwich bread.
