Eggs Benedict over Peppered Bacon

Happy New Years, friends.

What a whirl wind of a year it has been. As slow as many days felt in 2020, I can’t believe it’s officially the New Year.


I’ve posted few breakfast recipes, so wanted to share one of my favorites and the EASIEST way to poach and egg (Thanks TikTok)!





You can make this a healthy breakfast recipe with a turkey bacon, or Canadian bacon substitute and light English muffin for any #2021WeightLossGoals


This recipe is also great for mornings after big cookouts – Eggs Benedict over Brisket, Prime Rib, or whatever else you prefer!



 

Ingredients:

Serving Size, 2


· 2 eggs for poaching

· 2 egg yolks for the hollandaise

· 4 strips of bacon – Kiolbassa Peppered Bacon is my new favorite at Publix

· 1 English muffin, cut in half

· Heavy Cream

· ½ tsp lemon juice

· Butter



Instructions:


This recipe can really be broken down into 4 easy steps. See below.


Step 1: Prepare your bacon


Cook your bacon, or prepare the meat you’d like to serve with, if any

I air fry my bacon. I think it’s the best way to get crispy bacon with easy cleanup


Cut strips in half and air fry for 20 minutes on 400 degrees, flipping halfway in between


Step 2: Poach your egg


Poach your egg. I found silicon egg boats on Amazon (thank you TikTok), linked below, that you spray with cooking oil, drop in boiling water, crack your egg into, and then cover and let cook for 5 minutes.




It doesn’t get any easier!


3. Make Your Hollandaise


1. Melt your butter in a small saucepan

2. In a separate bowl, beat egg yolks and then mix in heavy cream, salt and pepper, a lemon juice

3. Once mixed, add a small spoonful of the melted butter to the egg mixture, stirring well. Repeat.

Adding the butter slowly will ensure the eggs won’t curdle

4. Once the butter has been fully stirred into the egg mixture, pour this combination back into the saucepan on low heat, stirring constantly (IMPORTANT) for 30 seconds.

5. Remove from heat until ready to serve.


Step 4:


Toast your english muffin.
