Creamy Mushroom and Steak Pasta

It has been such a long time since I’ve added a new recipe. I love doing it, but posts take time. I started a new job this year that has required a new level of focus, but I love doing this, so reprioritizing some time so that I can continue with Salt, Pepper, and Pinot.
Trying new recipes and dirtying 100 dishes a week cooking never stopped.
With that, I hope you enjoy this Creamy Mushroom and Steak Pasta.

I opted to make my own fettuccine. I’ll post the recipe to my homemade pasta next, however grabbing fresh or box pasta will work great with this recipe.
Ingredients:
· 1 pound of steak - I used ribeye, but any cut of steak would work
· 1 tablespoon of olive oil
· 1/2 yellow onion, diced
· 16 ounces of mushrooms. I used large cuts of portobello
· 1, 10/5 ounce can of cream of mushroom soup
· 8 ounces of beef broth
· 1/2 cup of sour cream
· 3 garlic cloves, minced
· 1/2 tsp garlic powder
· 1/2 tsp onion powder
· 1/2 teaspoon of Italian Seasoning - Italian Soffritto seasoning at Trader Joe's is my go-to! It’s a blend of minced onion, tomato flakes, crushed chili peppers, parsley, dried rosemary, and sage leaves.

Don't forget to shave some fresh parmesan on top!
Instructions:
1. Prepare pasta per packaging
2. In a medium/large skillet, add olive oil and diced onions. Sauté on medium heat for 3 minutes
3. Add mushrooms and minced garlic - sauté for another 3 minutes
4. Add cream of mushroom soup, broth, sour cream, and spices. Turn heat down to med/low
5. Drain pasta and mix with mushroom cream sauce
I cooked my steak in the sous vide separately (115 degrees), seasoning with salt and the Trader Joes Italian Soffritto, and then searing for 3 minutes on the cast iron skillet for 3-minutes a side. This will bring the steak to 130 degrees before pulling off the grill and letting it rest to rise to 135 degrees or medium-rare.
If you’d rather, you can pre-dice the steak, season with salt and pepper, and sear in the skillet before adding onions and mushrooms.
** This mushroom cream sauce is soo good. You could also substitute chicken for steak if you prefer.
