Cauliflower Tacos with a Cilantro Lime Sauce

Cauliflower Tacos!






If you are a meat lover, don’t ignore this recipe. I came along this recipe from Gimme Delicious when I was dieting, therefore eating light but since making, this has become one of my favorite recipes to make for weeknight dinners.

These Cauliflower tacos are paired with avocado, a cilantro lime sauce, jalapeño, and the secret ingredient RED CABBAGE.

After roasting the cauliflower and adding the avocado, you need the crunchiness of the red cabbage so don’t plan to skip out on that.

Fun fact: in pandemic focused world, one cup of red cabbage has as much Vitamin C as an orange. 85% of your daily recommended intake.


Don’t skip it.


 

Ingredients:

For Cauliflower:

· 1 head of Cauliflower

· 3 TBSP of Avocado Oil

· 1 TBSP of chili powder or taco seasoning

· ½ tsp of garlic powder

· ½ tsp of cumin

· ½ tsp of salt

For Creamy Cilantro Sauce:

· 1/4 cup of plain Greek yogurt

· ¼ cup of sour cream

· 1/8 cup of cilantro – more if preferred

· 1 clove of garlic – ½ tsp of minced garlic

· Juice of 1 lime

· Salt and Pepper

To Assemble:

· Small tortillas – I favor the street taco size

· 1 Avocado

· 1 Cup of shredded red cabbage

· 1 jalapeño sliced – I prefer pickled and mild jalapeño

· Cilantro for topping

Instructions:

1. Preheat your oven to 425 degrees

2. In a large bowl, toss in cauliflower florets with avocado oil and seasoning and spread across baking sheet covered in parchment paper or foil

3. Bake for 20 minutes until lightly charred

4. While cauliflower bakes, mix together ingredients for the cilantro sauce

5. Assemble tacos by warming tortillas, adding creamy cilantro sauce, cauliflower, red cabbage, avocado and jalapeños.

Serve with your favorite side, a skinny margarita, and enjoy!
